Appetizer: Crostini con Crema di Fave e Salame
Toasted bread topped with creamy fava bean purée, sliced salami, dressed arugula, and pecorino cheese.
Pasta: Tagliatelle con Guanciale, Asparagi e Zafferano
Tagliatelle tossed in a saffron cream sauce with tender pork cheek, asparagus, and earthy mushrooms.
Entrée: Baccala all Abruzzese
Flaky black cod in a rustic tomato-olive sauce with potatoes, cranberries, and pine nuts, infused with garlic and shallots and garnished with parsley and dill.
Dessert: La Cicerchiata
Mini honey balls coated in wildflower honey with lemon and orange zest, finished with coloured sprinkles and sliced almonds.
